Even as Ukraine is making history, so its chefs are making their own by creating modern national cuisine. They are taking classic recipes from each of the country’s regions and adapting them for contemporary tastes in the 21 st century.
Their work all comes together in Taste Ukraine, a new book – in Ukrainian and English - that explores and profiles produce, cuisine and recipes, together with history and culture from all regions of the country, whether free or temporarily occupied.
Despite the challenges of war and before that the covid pandemic, their work goes on, driving a trend that is seeing industry culinary standards improving year after year.
It reflects the Ukrainian identity, its resilience and persistence, the uncompromising commitment to quality and the striving for improvement.
Despite the circumstances, the book was completed and, of course, it is not just about recipes. It is part of a wider dialogue showcasing Ukrainian fortitude and unity, something understood and admired across the world.
Their contribution to the book completed, many of the chefs are actively working at charity events in support of the armed forces. Four chefs are serving on the front line feeding the troops.
